BREAKFAST COOKIE

Ingredients
2 mashed bananas
2 eggs
½ cup nut butter ( peanut butter or Cashew, almond)
3 tbsp maple syrup/honey
¼ cup pumpkin seeds, ¼ cup sunflower seeds
2 tbsp flaxseeds, 1 tbsp chia seeds
¼ cup dried fruit (cranberries, sultanas, raisins)
¼ cup shredded coconut (optional)
2 cups rolled oats
½ tsp baking powder
2 tbsp protein powder (optional)
1 tsp vanilla (optional)
Optional: chopped nuts, cacao nibs, cinnamon, extra seeds
Instructions
Preheat oven to 160°C, line tray with parchment.
Mash bananas, mix in eggs, nut butter, syrup, vanilla.
Add seeds, dried fruit, oats, protein, baking powder, coconut mix well.
Roll into small balls, flatten slightly, place on tray.
Bake 12–15 mins until edges are golden. Cool 5 mins.
