Banana Bread For The Soul
Prep Time 15 minutes
Cooking Time 20 to 45 minutes depending on the tin used
Ingredients
(use organic where possible)
3-4 frozen bananas
½ cup maple syrup
1 tsp baking soda
1 tsp baking powder
¼ tsp sea salt
½ tsp vanilla paste
2 eggs
pinch ground cinnamon
pinch ground nutmeg
1 cup gluten free flour
1 cup hazelnut meal
2 tsp milk or buttermilk
½ cup of melted coconut oil
Instructions
Preheat oven to 180C or 380F on fan-forced. Grease tin with coconut oil
Use a hand blender to blend the frozen bananas to a whipped consistency in a large bowl
Melt your coconut oil in a small pot over the stove (make sure you don’t boil)
Add maple syrup, baking soda, baking powder, salt, vanilla paste, eggs and blend well
Add cinnamon, nutmeg, hazelnut meal and milk then sift the gluten free flour in
Slowly pour melted coconut oil in and mix until the batter is consistent
Pour the batter into the coconut oil greased tin (muffin or loaf)
Pop it in the oven - 20 -25 mins if doing muffins, 40-45 min for a loaf
Do the knife test to see if its done - if it comes out clean, its done. If there is batter on the knife you know it needs a bit longer
NOTE
For this recipe, you can use a hand blender or a Kitchen Aid mixer. You can also add sliced bananas or pecans on top before baking
