Gluten Free Chocolate Chip Brownies

Ingredients

185g Unsalted Butter 

2 Vanilla Bean Pods 

180g Bittersweet Dark Chocolate 

2 Large Eggs 

2 Egg Yolks 

65g Caster Sugar 

75g Almond Meal 

75g Tapioca Flour 

50g Coca Powder 

80g Organic Dark Chocolate Bar

30g Pecans 

Instructions

Pre heat oven to 180*C/350*F and grease a 23x23 cm banking pan

Clean Vanilla Pod (aka scrape the centre clean)

Chop the chocolate to small pieces and melt with butter in a saucepan over simmering water. Then once melted, set aside and cool 

Using an Electric mixer to beat the eggs, yolks, vanilla and sugar together until smooth and creamy. Add the chocolate and butter slowly while mixing for another 2 minutes

Fold in the tapioca flour and almond meal then add in the melted chocolate and pecans

Pour into the greased pan and bake for 18-20 minutes. Let cool for at less and hour

Best time to cut is after its rested in the fridge for at less 3 hours
