Cool Beans (and Grains!)- The Ultimate Guide to Cooking Them Right
Start by soaking your beans or grains in a bowl of warm, filtered water with 1–2 tablespoons of lemon juice or apple cider vinegar. Cover the bowl and set it aside for 12 hours before cooking. Soaking, sprouting, and fermenting help make all beans, nuts, seeds, and grains significantly easier to digest.
When you're ready to cook, give them a good rinse, then add them to a pot and cover with fresh filtered water. Adding a strip of kombu seaweed or two bay leaves will help reduce gas, bloating, and abdominal pain. We all know the song, "Beans, beans, they're good for your heart; the more you eat, the more you fart..." While the lyrics are charming, we certainly don't want to live that reality!
Bring the water to a boil, then reduce the heat to low and let it simmer. Cook until tender, skimming off any foam that rises to the top (this also helps reduce bloating). Finally, add salt, drain the water, and remove the seaweed or bay leaves. Enjoy them immediately or store them in the fridge for 2 to 3 days.

The 40-Chew Challenge!
Chew your food until it feels like paste—this usually means chewing each bite around 40 times, since there are no teeth in your stomach to help!
While it’s great to drink plenty of water 30 minutes before a meal, try to avoid drinking lots of liquids during mealtime. Limiting liquids allows your digestive system to work harder (and therefore burn more calories) as it processes your food. It is also best to steer clear of alcohol and caffeine near mealtimes to keep your digestion running smoothly.
